Creamed Spinach & Artichokes
You need 1 large bag fresh spinach, 1 red pepper, 1 onion, 1 medium jar marinated artichoke
hearts, 1 8 oz. package cream cheese.
Drain the oil from the artichoke hearts in to a heavy pan and add red pepper sliced thin and
onion chopped coarsely. Sauté until just slightly tender. Add spinach and cover and let steam
until spinach starts to wilt. Add artichoke hearts and cream cheese. Cover and lower heat for
10 minutes. Add white pepper to taste and stir well.
