Bacon Cheeseburger Quiche (low carb)
1 lb. lean ground round
1 small onion, chopped
4 slices bacon, crisp cooked, chopped
3 eggs
1/2 cup mayonnaise
1/2 cup half and half
8 oz. cheddar or swiss cheese, shredded
Garlic powder to taste
White pepper
Preheat oven to 350 degrees.
Brown hamburger in skillet with onion. Remove and mix in bowl with bacon pieces. Break up any larger clumps until it becomes a fine mix. Drain well.
Press into bottom of a deep-dish pie pan. Set aside.
In mixer, combine remaining ingredients and whip well. Pour mixture over beef "crust". Bake 40 to 45 minutes or until top is browned and "set".
Cool 15 to 20 minutes before slicing.
Serves six.
Each serving: 6.2 grams carbs.
