Recipe Card for Noodle-less Pad Thai ~ Low-carb & Poultry

In a large frying pan or wok heat 2-3 T. olive oil. Add 2 pieces of ginger chopped and 1 T. garlic.

Saute 2 boneless, skinless chicken breasts cut into strips.

Add 1 t. dark sesame oil. Add 4-5 green onions cut in strips, 1/2 c. sliced mushrooms, 1/4 c. pea pods and saute lightly. Remove chicken and vegetables to a plate. Break two eggs into a cup and beat with 1 t. water. Drizzle into juices in pan, stirring rapidly. Return chicken and veg to pan and heat through with 1 t. fish sauce added.

On two plates mound bean sprouts. Spoon chicken and vegetables over sprouts. Top with fresh cilantro and crushed peanuts.

If you want to add shrimp that is delicious also.
