In a large frying pan or wok heat 2-3 T. olive oil. Add 2 pieces of ginger chopped and 1 T. garlic. Saute 2 boneless, skinless chicken breasts cut into strips. Add 1 t. dark sesame oil. Add 4-5 green onions cut in strips, 1/2 c. sliced mushrooms, 1/4 c. pea pods and saute lightly. Remove chicken and vegetables to a plate. Break two eggs into a cup and beat with 1 t. water. Drizzle into juices in pan, stirring rapidly. Return chicken and veg to pan and heat through with 1 t. fish sauce added. On two plates mound bean sprouts. Spoon chicken and vegetables over sprouts.
