Gotta have Pizzelles! 6 eggs * substitute lemon, orange extracts/rinds, too, if preferred or vanilla extract Beat eggs thoroughly at least 10 minutes. Gradually add sugar, beating to dissolve. Add oil and butter cut into pieces. Beat well---make sure butter is mixed in and add extract. Gradually add flour/salt/baking powder mixture and anise seeds. Leave batter in refrigerator several hours or overnight. Place spoonful in center of pizzelle iron (heated per instructions) big enough to fill the space, but not run over. (Eat your experiments!) and cook until golden. Set on flat rack to cool and store in airtight container. (Originally posted to the Cape Ann Online message board by "Evelyn".)
