CAKE 24oz (3 packs) cream cheese TOPPING I pint sour cream Let cream cheese soften then beat in mixer until smooth. Add eggs, sugar, salt, almond extract and beat until thick, smooth, and lemon colored. Pour into buttered 9" springform pan. Bake at 325 for 50-60 minutes (at times this might take a little longer even, but check it----should be well risen and just golden on top and not "loose".) Remove from oven and cool for about 20 minutes. Mix ingredients for the topping and pour it on the partially cooled cake and return it to the 325 degree oven for 10 minutes. Cool well before removing from the pan and refridgerate until ready to serve---best when served after sitting out of the refridgerator for about 20 minutes.
