Ginger Cookies
1 1/2 c flour
1 tbsp ground ginger
1 tsp baking powder
1/4 tsp salt
1/4 tsp baking soda
1/2 c light brown sugar, packed
1 stick butter, softened
1 large egg
2 tsp vanilla
1/2 to 3/4 c crystallized ginger chopped in 1/4" pieces
Combine all dry ingredients and set aside. Beat brown sugar and butter on medium speed in mixer until light and fluffy. Beat in egg and vanilla and reduce speed to low. Beat in flour mixture and ginger until soft dough forms. Mix 3 tbsp sugar and 1 tsp ground ginger in small bowl. Drop dough by teaspoon into ginger/sugar mix, roll with hands to coat and place balls 1" apart on greased cookie sheet. Bake at 350 for 12-15 minutes or until just firm.
