Pumpkin Cheesecake
2-8 oz pkgs. cream cheese
1/2 cup canned pumpkin
1/2 cup sugar
1 tsp vanilla
1 tsp cinnamon
1/4 tsp. nutmeg
2 eggs
1 prepared graham cracker pie crust
Soften cream cheese. Mix all ingredients until well blended. Pour into crust and bake at 350 degrees F for 40 minutes. Center should be almost set. Brush top with maple syrup.
Let cool to room temperature then refrigerate overnight. When ready to serve, garnish with pecans and whipped cream or mixture of whipped topping and nonfat vanilla yogurt.
