Zucchini Bread
3 eggs
1 cup light brown sugar
1 cup white sugar
1 cup vegetable oil
2 tsp. vanilla
2 cups unpeeled zucchini, grated and drained
1 tsp. cinnamon
1 tsp. nutmeg
2 tsp. baking soda
2-2/3 cups flour
1 tsp. salt
1/4 tsp. baking powder
Optional:
1 cup chopped nuts
1 cup raisins
Grease and flour 2 loaf pans.
Beat eggs until frothy. Add sugars, oil and vanilla. Beat until thickened. Add zucchini, flour and dry ingredients. Fold in nut and/or raisins.
Divide batter between pans. Bake 1 hour at 350 degrees (when cake tester comes out clean).
